Spring Spinach Spaghetti with Burrata

A quick Spring Pasta Dinner with lots of fresh Spinach!

This will have you eating so many greens without even knowing it.

PREP TIME: 5 Min. COOK TIME: 15 Min.

SERVED: 2 hungry farmers who went back for seconds and still had some for leftovers.


1 Lb Spinach 1 Avocado 3/4 Cup Half & Half 1 Lb Spaghetti 1 Burrata Ball 1-3 tbsp Garlic Powder Garlic Scapes Crushed Red Pepper Flakes Salt & Pepper


Bring a pot of water to a boil.

Remove from heat, add some salt and mix in Spinach.

Let wilt for a few seconds and transfer to an ice bath.

Return water to boil and add Spaghetti. Monitor it. Cook until al dente.

Warm Burrata.

Strain Spinach well and transfer to a food processor.

Add Avocado, salt, 1-3 tbsp Garlic Powder and blend. Add the Half & Half along the way.

When pasta is done. Strain and add Spinach Puree. Toss to coat.

Top each plate with a dollop of Burrata.

Sprinkle with Red Pepper Flakes, Salt, Pepper & Chopped Garlic Scapes.
